New Food: Cheater’s Chili (and Tomato Soup)

by Llanion on October 16th, 2009

Today’s recipe combines a variety of things that were entirely vital today:
1: It’s fast.
2: It’s cheap.
3: It’s simple.
4: It makes enough for at least one person.
5: It’s hot.

Ingredients:
1 can diced tomatoes (28 fl oz)
1 can brown beans (14 fl oz)
1/2 tsp each oregano, dried chili peppers, ground black pepper, salt, lemon juice
1 cup salsa (mild to hot depending on how spicy you like it)

Put the ingredients into a pot. Yup, all of them.
Chuck ‘em in there, scramble ‘em all up.

Heat on stove at medium 10 minutes or until the mixture starts to bubble merrily, stirring occasionally. When this happens, reduce to a simmer. After about twenty minutes of this, drain the liquid into a seperate bowl. You now have a pot of thick almost-chili and a bowl of tomato soup. Each serves two (the soup might serve three in a pinch).

Voila.

Toldja it was cheating. (Be on the lookout for my actual chili recipe, true believer- unlike this recipe it takes a lot more than half an hour, and it’s not vegetarian).

Props to Cadistra at WoW, Eh?, whose musing made me decide I wanted soup today. Also holla to the not-yet-zombified Bellwether, who might enjoy this.
